We’ve teamed up with Head Chef David Rice of the Kinsale Gourmet Academy at Ballinacurra House to bring you some tips and tricks to ease the strain of cooking nutritious meals for kids during quarantine.

Pizza

Ingredients.

2 precooked pizza bases or for fresh pizza base see below.

2 cooked chicken breasts chopped

100g grated cheese

Cooked tomato vegetable sauce.

Method:

· Preheat oven to 220c and preheat the tray as well

· Put the pizza base onto the hot tray, spread on some sauce, followed by the chicken and cheese.

· Bake for 10-12 minutes until golden and crisp.

Fresh pizza base

Ingredients

500g strong flour

300ml tepid water

3g dried yeast

5g salt.

Method

Mix all the ingredients together for 10 minutes until a smooth dough is formed. Cover the dough and leave to rise for one hour. Divide the dough into 2 balls. Leave to rise in the fridge for six hours. Remove dough from fridge one hour before you are going to cook it. Roll out the dough place it onto a hot tray, put on the vegetable tomato sauce followed by the cooked chicken and cheese and bake at 250C
